Shaved Beet Salad

What you’ll Need….

1 red beet

1 yellow beet

1 cup of chopped watercress

6 cherry tomatoes (halved)

1 cup lemon juice

3 tablespoons olive oil


Here’s How to do It…

This is a very simple recipe but somewhat time consuming. It looks really nice if you use red and yellow beets but just one color works fine too. It’s really a matter of peeling all the skin off the beets and carefully peeling vertically to make these little slices. It’s easier with a mandolin if you have one, if not a regular peeler works fine.

Once you have all the beets ready toss them in olive oil, lemon juice, and salt. If you are using different color beets make sure you mix them in separate bowls because the die from the red beets will stain the yellow ones.

In a separate bowl toss tomatoes with watercress in the same kind of olive oil, lemon juice, and salt mixture.

Now you can arrange the beet slices around the plate like the picture with the watercress and tomato salad in the middle. The garnish is just peeled raw asparagus tossed in olive oil, lemon juice, and salt and formed in to a ball.
